Colorful Jell-O~ A Mexican Recipe

Makes: approximately 15 servings (depending on shapes and sizes) Time: 2 days

Ingredient List ~

6 boxes of Jell-O in different flavors (Suggested colors: red, orange, yellow, blue, purple, green) 4 (0.25 oz) envelopes KNOX unflavored gelatin 4 cups milk 2 tbs pure vanilla extract 2/3 cups white sugar

How to make it ~ Part One. Start two days before ~

Prepare each Jell-O following the instructions on the box. Line with cling wrap six square plastic containers that have lids. Pour each Jell-O into a container. By the end of this step you should have six containers with Jell-O. Cover them with their lid, or use plastic wrap, and place them in the refrigerator. Leave them overnight to set completely.

How to make it ~ Part Two. Start one day before ~

Bring 3 cups of milk to a boil, then set it aside while you pour 1 cup cold milk into a large bowl and sprinkle the unflavored gelatin over the milk. Let it stand for 1 minute. Now add the hot milk to the cold, and swiftly stir with a whisk until the gelatin completely dissolves. This should take about 5 minutes. Stir in vanilla and sugar.

Let the milk cool down to room temperature. While that’s happening, gather the colored Jell-O containers. Flip the colored Jell-O over a cutting board and gently try to tap the Jell-O out. Once it’s out, cut it into cubes and place back into its container. Repeat this process until you have 6 containers full of cubed Jell-O.

Now that the milk has cooled down (but not set), gather your large container of choice. You can use a punch bowl, a Bundt cake pan, individual glasses, Pyrex containers, gelatin molds, even cupcake or tart pans. Grease the container of choice with a flavorless oil of preference (or line with plastic wrap*), and pour some of the milk gelatin in. Drop in the Jell-O cubes randomly, and pour some more milk gelatin. Keep going until you fill your container. Place in the refrigerator overnight to set completely.

How to make it ~ Part Three. D-Day ~

Flip your container over a large plate, cutting board, or any surface you plan to use for presentation and serving. Gently tap the back of the container until the gelatin comes out.

If it is not letting go: 1. You can slide a rubber spatula between the container and the gelatin to separate it.

2. (The better option) You can fill a larger container with lukewarm water and place the underside of the gelatin container in the water for a few seconds to slightly melt and loosen the gelatin (do not leave it in the warm water for too long!). Try flipping it over again and it should come out easily.

*Note - The gelatin comes out of its mold or container much easier if you line it with cling wrap, as opposed to greasing it, but if you don't happen to have cling wrap in hand, greasing the mold is a good alternative.*

I hope you enjoy this recipe! For us, this recipe yielded 5 tall drinking glasses (for individual servings), one full Bundt cake pan, and one shallow Pyrex 10 inch round pie pan. This recipe is ideal for children's birthday parties, as it makes plenty.

Feel free to reduce the ingredients to half to make less. You can use as many or as few colored Jell-O as you want. You could even do only two colors. This recipe is very versatile.
